Nothing beats a nice steak broiled on the grill. Not all steaks are created equal. Careful selection of quality meats is essential to a great steak.

Grilling can be a very rewarding experience. Or it can be a disaster! Don't burn them. I prefer mesquite woo for grilling my steaks. Gas lever a undesired taste on the meat. Charcoal is good and improved with wood chips for smoke flavoring. The most important thing is to get a ever bed of coals as big as the area the steaks will require when placed on the grill. The coals should be bout 4 inches below the meat.

Searing the steaks will seal in the juices to keep the meat juicy. To sear a steak place it on the grill for 1 -2 minutes and then turn it over and do the other side the same and then turn it over to begin the cooking process. Keep a eye on it and turn it several times before it is cooked to your liking.

Grilling Tip:Mesquite wood works well for a heat source and adds a wonderful smoke flavor.
